Located in Walla Walla (!!!!) Washington (not Australia) Northstar’s aim is simple, produce the best Merlot in the world. America has a strong affinity with the wines of Pomerol and this has bred winemakers with the aim to produce ‘Bordeaux beaters’. The winemaker David ‘Merf’ Merfeld has nearly 24 separate blocks of Merlot at his disposal which through rigorous selection whittles these down to a dozen or so which make it fro the final blends. Each vintage provides different blocks and therefore quality and individuality can be maintained.
At harvest, grapes were held separately, destemmed and crushed with 25% whole berries remaining. Grapes fermented on the skins for five days with daily punch downs to extract flavor, colors and fine tannins. The wine was placed into French (70%) and American (30%) oak barrels where it underwent malolactic fermentation. The barrel rotation included 70% new barrels. The lots aged separately for 18 months with barrel-to-barrel racking occurring at three month intervals.
